Hitchin Farmers Market is on the 4th Tuesday of every month in the town's Market Square. There are an average of 10 to 15 stalls selling everything from fresh fish to locally grown watercress.

There is a general market at Hitchin on a Tuesday, Friday and Saturday. Royston Market is on Wednesday and Saturday.
